One of my absolute favorite seasonal dishes is Chiles en Nogada, and I’m excited to share why this dish is so special and how it connects to our life here on the island.
What are Chiles en Nogada?
Chiles en Nogada is a quintessential Mexican dish that embodies the heart and soul of Mexican cuisine. It features poblano chiles stuffed with picadillo—a savory-sweet mixture of shredded meat, aromatic spices, fruits like apple, sweet-milk pear, and criollo peach. This flavorful stuffing is then topped with a creamy walnut-based sauce, known as nogada, and garnished with pomegranate seeds and parsley. The dish is typically served at room temperature, making it a perfect feast for gatherings.
The vibrant colors of Chiles en Nogada—green from the chiles, white from the nogada sauce, and red from the pomegranate—mirrors the colors of the Mexican flag, adding a patriotic touch to this delicious dish. It’s traditionally enjoyed during August and early September, aligning with the season when pomegranates are in full bloom and Mexico’s Independence Day festivities take place.
Legend has it that Chiles en Nogada was created in 1821 to celebrate Mexican independence. As General Agustín de Iturbide and his army passed through Puebla, Augustinian nuns crafted this dish to reflect the colors of the Trigarante Army—white, green, and red—symbolizing Religion, Unity, and Independence.
Another story suggests that local women, eager to impress soldiers with a special dish matching their uniform’s colors, prayed for inspiration and created the beloved Chiles en Nogada we enjoy today.
Since 2010, Chiles en Nogada has been celebrated as an Intangible Cultural Heritage of Humanity by UNESCO. This prestigious recognition highlights the dish's cultural significance and timeless tradition, making it a must-try culinary experience here in Cozumel. Chef Jonathan, originally from Puebla, is passionate about the authenticity of this traditional dish, insisting on using only the exact ingredients from his homeland.
This dedication often presents a challenge, as sourcing these ingredients in Cozumel can be difficult. It's said that the recipe for Enchiladas Agustinas was originally created by the Agustinas nuns to use up leftover stuffing, adding a touch of history to this delicious dish served in September in Sereno Rooftop Restaurant.
Paprika Restaurant: A great place to enjoy Chiles en Nogada, only served September 14th, 15th and 16th, while soaking in the island’s stunning views.
